Holding a knife daily, preparing the tuna, and readying the courses—this rhythm can feel like a mere repetition, yet it is so precious that it becomes frightening.

Yet, a curious thing happens. When a guest marvels at a single course, strength returns in that very moment.

It is especially true on days like these.

When the body and heart feel a little heavy,

watching a meticulously prepared fifteen-course journey become a source of comfort or a small comma for someone to reset their life—it makes me realize that this is exactly why I took up the knife today.

This is more than just food; it is a rhythm of a meal designed to hold the flow of a human heart.

The Fifteen Courses – A Story Unfolding on the Palate

1. Tuna Porridge

A warm greeting that gently prepares the soul.

It is as if the dish itself is softly saying, "Welcome."

2. Tuna Salad

Fresh tuna resting atop vibrant greens.

It allows you to take your first step with the clarity of a fresh morning.

3. Fish Balls

Crisp on the outside, tender within.

Much like people; even those who seem firm on the outside carry warmth in their hearts.

4. Grilled Mushrooms

The aroma of butter and the texture of the king oyster mushroom.

Even in an ordinary day, there are such subtle flavors hidden waiting to be found.

5. Sashimi

Different cuts and textures for every day.

Bigeye, Bluefin, Southern Bluefin.

Though they are all tuna, their characters differ. People are the same; each has their own unique grain.

6. Sushi

Rice and wasabi, soy and fish.

The harmony between these small elements.

Is that not how the relationships we live by work as well?

A flavor that strikes an exquisite balance within its richness.

We need such balance in the space between people.

Even if you arrive weary, you leave with a heart restored.

Perhaps that is why a guest once left us with these words:
