Goldtuna. Infusing the heart into every slice.
Choi Yeon, the Tuna Craftsman
Greetings. This is Choi Yeon, the proprietor of Goldtuna.
I look at the words left behind by our guests—meticulous records of their time with us. Each word is a gift. How could we ever offer anything less than our absolute best in return?
These days, I am immersed in a dedicated study of hospitality through an intensive 13-week marketing program. While the insights are profound, my heart never truly leaves the dining room. My thoughts are always with the restaurant, our guests, and the staff who carry our vision forward. Today, as I stood in our Sinsa branch capturing these images, a quiet anxiety lingered—a longing to be present for every guest we serve.
It is a commitment to growth. A 13-week journey to ensure that when we meet again, your experience is even more refined.
There is a weight of apology in my heart for the moments I am not there to greet you personally. Yet, I spend every hour away envisioning the joy at your tables. I am constantly searching for ways to elevate the art of sincere service, refining the quiet dedication that defines our home.
This is our Sinsa branch. A light-filled space where the city view frames our tables.
At Goldtuna, our most cherished value is honoring the spirit of our guests. My mission is to listen to the unspoken warmth you bring and to transform that connection into a constantly evolving experience through tireless effort.
My team is no different. They give their absolute best every day, and I see it as my duty to provide them with a supportive, graceful environment. When they feel cared for, that devotion naturally flows to your plate. I hope these words reach you. The small acts of care we practice here are building toward something meaningful. When you return, I promise to welcome you with a heart that has grown even deeper.
We aim to serve you with a heart as beautiful as the space we have built in Sinsa.
I look forward to the many moments we will share. May your time at Goldtuna always be filled with quiet joy.
The omakase counter awaits, a space designed for intimate connection.
