The spicy rice cakes I ate as a child were intensely sharp.

Even if I followed that exact recipe today, that specific taste would likely never return.

Perhaps the heat of those days felt so significant not because of the recipe itself, but because of the scenery surrounding the meal.

The small shop tucked in a narrow alley, the noodles shared with friends, the scent of a stew simmering in my mother's kitchen.

In truth, the precise flavor has faded from my mind.

Yet, the memory remains strangely vivid.

While the taste has vanished, the feeling still lingers.

Flavor is recorded by the tongue, but a true experience is etched into the soul.

To the left, distinguished influencers who graced our tables; to the right, a lovely couple who waited a full month with joyful anticipation.

The taste disappears, but the landscape of that meal endures.

We often remember the scene of a meal more clearly than the food itself.

The steak enjoyed on the day of a first paycheck,

the pasta shared in the first flush of love,

the simple rice roll chewed slowly in the quietude of a farewell.

The food of those days is woven into the mind alongside the light, the temperature, and the emotions of the moment. Memory outlasts flavor.

It is not necessarily 'that flavor' we long for,

but the version of ourselves and the state of our hearts during that moment.

In this way, memory always triumphs over taste.

How, then, should Goldtuna approach each day?

Faced with the simple truth that memory defines taste, I return to this question.

How will I remain in someone’s thoughts?

Can I leave a warm afterimage in the space a guest once occupied?

A kind word, a steady gaze, a moment of quiet consideration.

If all these are remembered alongside the meal, then I am not merely serving food.

I am a person handing over a fragment of a memory.

I lead a specialized tuna restaurant called Goldtuna.

Day after day, I hold the same knife and prepare the same ingredients.

But no two days are ever the same.

For one guest, it is a milestone anniversary; for another, a long-awaited reunion; for someone else, a day in search of comfort.

Thus, I believe.

A single, exquisite piece of tuna can remain as a warm scene in the heart.

It is my hope that in the years to come, our guests might say...

The tuna there was excellent, but more than that... it was a truly wonderful day.

To hear those words, I prepare memories that transcend taste.
