During a conceptual trip to Tokyo last year, I had a realization.
While tuna is abundant, it is difficult to find a place that structures an entire meal with the abundance and flow of a Korean-style course.
The traditional Japanese approach often focuses on the absolute perfection of a single piece.
The Korean course, however, focuses on the narrative flow of the entire sitting.
At Goldtuna, we have spent years refining this rhythm. We begin with a warm tuna porridge to soothe the palate, followed by a salad and fish balls to awaken the appetite. Sautéed mushrooms add an earthy aroma before the main sashimi takes center stage.
Then come the sushi, monkfish liver, grilled delicacies, tempura, hand rolls, udon, and finally, a cooling ice cream.
It is not just about the number of dishes.
