The tuna salad, fish balls, and grilled mushrooms are more than simple appetizers.
They represent a natural expansion of sensation, moving from cold to chewy to warm.
Rather than serving rich tuna immediately on an empty stomach,
we gradually heighten the sensitivity of the palate to safely receive the density of the tuna.

2. The Main (Allegro) – Focused on Tuna No. 9
12 pieces of sashimi, 2 pieces of sushi, and 6 service cuts of tuna.
In this phase, guests naturally find their pace slowing down.
