The tuna undergoes 5 to 8 hours of aging and stabilization at 0°C. This low-temperature process minimizes tissue damage and preserves the harmony between the marbling and protein. |

A fat content of 60% or higher is required. The marbling must be delicately dispersed throughout the meat, reminiscent of fallen snow. |

Selection of Cuts |
Limited exclusively to the collar meat and the foremost part of the fatty belly. These represent rare portions of less than 4kg from a single fish. |
