The fat isn't heavy; it's clear and clean, so it’s not overwhelming until the very end. Each cut has a slightly different flavor, so there's definitely a fun element to eating it. In particular, even if you put a lot of wasabi on it, it doesn't sting sharply but rather brings out the sweetness. That's why it has a charm that keeps you eating. Each piece is served with such care that I felt truly pampered, and the plating is so beautiful that I marveled once with my eyes and once with my mouth.
