As each day begins, I pose a single question.

What can I learn today?

This inquiry has been a guiding habit of mine for a very long time.

A moment captured with my fellow students. These are individuals I deeply respect, and I sincerely wish for their continued success.

I recently embarked on a brief but meaningful benchmarking tour of the Seongsu-dong neighborhood.

1. Jojo Noodles: The clean interior and the curated display of guest signatures were particularly striking.

2. Nanpo: I experienced a modern reinterpretation of the profound depths of traditional Korean cuisine.

3. Ggupdang: A familiar pork dish was elevated through a lens of sophisticated branding.

4. Grandpa's Workshop: The contrast between the industrial facade and the refined interior told a story through the space itself.

5. Mealdo: This small bakery has become a landmark, giving a new identity to simple bread.

Through these varied experiences, I arrived at a realization.

Dining is never merely about filling one's stomach.

It is an expression of desire, a reflection of trend, a moment of rest, and a piece of culture.

There is an emotional resonance that flavor alone cannot deliver.

It is transmitted through the narrative that exists between the food, the space, and the people.

These reflections bring me back to our restaurant with a renewed perspective.

The space I am cultivating must not stop at simply providing delicious tuna.

I hope the quiet dedication within each slice of tuna, and the story behind it, becomes a small comfort and a special memory for our guests.

That aspiration is poured into our menu, our atmosphere, and the way we welcome every person who walks through our doors.

As shown, we chose to pause our lunch service to focus on this journey of learning.

The pursuit of learning continues.

Whether through the words our guests share or the journeys I take myself,

that knowledge must ultimately find its way back to our guests.

It returns as more refined cuisine, a warmer space, and the art of sincere service.

Every time I open the doors of our restaurant, I renew my commitment.
