Gold Tuna 15-Course Experience: Featuring Crispy Fried Tuna

At Goldtuna, we continue our journey of refinement by introducing a new Tuna Tempura to our course, seeking a more perfect harmony.

Our menu development originally centered on a triad of land, sea, and air—beef short ribs, grilled black cod, and chicken. Yet, there was a lingering sense of hesitation; poultry somehow felt disconnected from the deep, oceanic soul of a tuna specialty house.

That quiet concern remained with me until a moment of inspiration struck quite unexpectedly.

While enjoying fried blowfish at a renowned Japanese restaurant in Gangnam, a question surfaced: "What if we applied this delicate technique to tuna?"

After days of trial and error, we are finally ready to present our own rendition of Tuna Tempura.

Tuna transcends the plate to become a work of art at Goldtuna.

Tuna, with its rich and healthy oils, is notoriously difficult to transform into a fried dish.

To maintain a tender interior while achieving a crisp exterior, every detail required precision—from the selection of the cut to the thickness of the batter and the exact seconds spent in the oil.

If the batter is too heavy, the tuna's delicate flavor is lost; if too thin, the essential crunch vanishes.

We have finally discovered the optimal balance.

By frying at a high temperature for a very brief duration, we preserve the natural juices of the fish while enveloping it in a golden, crispy shell.

Drawing from traditional Japanese tempura techniques, we achieved a light crunch and paired it with a curated sauce to amplify the inherent savory depth of the tuna.

Before the official launch, we held a private tasting for our staff and regular guests, and the response exceeded our expectations.

Many noted how the texture transitioned from crisp to meltingly soft, describing it not merely as a side dish, but as a culinary highlight.

The rich umami of the tuna, enhanced by the heat of the fryer, integrates seamlessly into the rhythm of our course menu.
