First, check the species, size, and cuts.
When selecting Bluefin tuna, Goldtuna sets a minimum standard of 250kg and primarily uses fish in the 350kg class. Rather than using the entire fish, we selectively source only the necessary cuts, such as the kama (collar), belly #1 and #2, and front-end akami (lean red meat).
The important thing is not just the statement "We use Bluefin tuna." The first criterion is whether they can explain what size of tuna they use and from which specific parts the cuts are sourced.

2. How are thawing and moisture managed?
Sourcing good raw material is only the beginning.
How the frozen tuna is thawed and managed directly affects the quality of each individual piece served.
Goldtuna maintains a standard of cutting only after complete thawing and removing all surface moisture. While the raw material is a matter of sourcing, thawing is a matter of technical skill.

3. What is the thickness and cut quality?
Even for the same cut, the texture felt in the mouth changes depending on how it is sliced.
Rather than slicing tuna thinly, Goldtuna cuts it with a consistent thickness. This is combined with our precise thawing and moisture management.
You should check whether the thickness is uniform, if the cross-section is clean and undistorted, and if there is no unnecessary moisture remaining on the surface.

Goldtuna's 15-course meal includes grilled dishes, fried dishes, Chinese-style dishes, a main meal, and dessert, in addition to sashimi and sushi. This configuration balances different temperatures and textures within a single meal.

5. Can everyone dine comfortably?

Recently, a group visited Goldtuna Bangi Branch for a family dinner.
A family visited Goldtuna in mid-September for a dinner. They enjoyed their meal and kindly agreed to a commemorative photo as they were leaving after settling the bill. On this day, they enjoyed the Royal Course along with the Jumakase service.
The menu selected on this day was the Royal Course. We also provided the Jumakase service during the meal.
The Bangi branch frequently hosts family guests and corporate dinners. Goldtuna’s Jumakase can be requested at the time of reservation or requested from a staff member on-site. However, the timing of the service may vary depending on the restaurant's current situation.
